No Boil Corned Beef

3.75-5 lb corned beef

3 T Dijon mustard

1 T whole grain mustard

3 T coconut sugar or brown sugar

3 T balsamic vinegar

1 C water



  1. Preheat the oven to 375°

  2. Rinse the corned beef really well and place in a roasting pan or 9×13 aluminum tin

  3. In a small mixing bowl or measuring cup, combine the rest of the ingredients

  4. Mix well and pour over the corned beef

  5. Cover the pan (If you are using a 9×13 you can use the tops they sell for these pans or heavy duty aluminum foil) and roast 2.5 hours.  At this point check it to see if the meat is as tender as you like it.  If not, return the meat to the oven for another half hour.

  6. Slice when cooled (I sliced it when it was still hot, and served)
