Baked Lemon Potatoes

4-5 pounds of baby potatoes
1 cup of water
Lemon zest of small lemon
1/2 cup fresh lemon juice
1/2 cup olive oil
3 cloves of garlic minced
2 tsp of salt
2 tsp of dry oregano
1 tsp of pepper




  1. Mix all the ingredients together except potatoes in large bowl. Place in potatoes and toss well to coat evenly.
  2. Bake at 350 degrees F. Turn often to keep potatoes well coated. Cook 1-1 1/2 hours.
